BREAKING: A new culinary gem, Yuma Fritas, is set to open in Rochester, bringing a burst of Cuban flavor to the former Taco Jed space. Scheduled for a mid-December launch at 808 Broadway Ave. S., this exciting venture by Chef Justin Schoville and Lindsay Zubay promises to introduce local diners to a deliciously unique menu influenced by Cuban street food.
The former Taco Jed location, which closed its doors in October after seven years of service, will soon be transformed into a vibrant restaurant specializing in fritas—Cuban-style burgers traditionally made with chorizo and topped with crispy shoestring potatoes. Schoville revealed that the inspiration for Yuma Fritas stemmed from a visit to Florida, where he first encountered fritas in Miami. “We’ve been looking at spaces for the last couple of years,” he stated.
Yuma, a Cuban slang term for foreigners, reflects the restaurant’s blend of authentic Cuban dishes with innovative twists. Schoville, who does not have Cuban heritage, describes the cuisine as “Cubanish,” aiming to serve traditional dishes alongside creative variations. Diners can expect a variety of fritas options—including chorizo, beef, chicken, and fish—served on a toasted egg bun, adorned with toppings like Havarti cheese, bacon, cherry tomato salsa, avocado, and mango slaw.
In addition to fritas, the menu will feature a classic Cuban sandwich, a plant-based version, fried plantains, coconut ginger rice, and malanga fritters. The restaurant will also serve batidos, tropical smoothies crafted from ingredients like coconut, guava, and caramelized pineapple. “We’re just working on some tests right now to finalize them,” Schoville added, emphasizing their focus on authenticity.
Yuma Fritas will also have a full bar offering an array of tropical cocktails, including mojitos and piña coladas. Notably, traditional fountain sodas will be absent; instead, the restaurant will provide imported bottled drinks made with cane sugar.
With plans to hire a staff of 20 to 30, Yuma Fritas will be open seven days a week. Schoville expressed confidence in the transition from Taco Jed, highlighting minimal changes required for the space: “We just need the three Ps—paint, plants, and a playlist.” The ambiance will feature a curated Cuban soundtrack, alongside vibrant plant life and fresh decor.
